9 Ways to Use Leftover Rotisserie Chicken
Rotisserie chicken is one of my favorite quick, healthy, everyone will eat it meals. I serve it with whatever vegetable I have around and some starch - sweet potato fries, fingering potatoes, rice, quinoa, you name it. The only problem is, no one wants to eat the leftover chicken the next day. Somehow, no matter how I have tried to reheat it, I just can’t capture that warm, juicy taste it has when I first bring it home. So, I’ve come up with some uses that leave everyone happy. No waste and I get a second dinner out of it.
White bean chicken chili
Saute onions, garlic and green peppers. Remove from heat. Warm the chicken with some chicken broth and 2 tbsp whole milk. Add vegetables back to mixture. Season with chili powder, celery seed, salt and pepper. Add can of cannellini beans and serve over rice.
Bbq chicken sliders
Mix leftover chicken with good bbq sauce like Bone Sucking’ Sauce. Serve on mini slider rolls. Inspo @palatebydesign
Toss on a salad for grown-up lunch (picture below)
Add a good salad dressing (like Green Goddess from @traderjoes or @primalkitchenfoods Sesame Ginger) and you have a quick, healthy lunch to take to work
Chicken salad
Chop or cut chicken into roughly cut 1” pieces. Mix with good quality mayo, small amount of dijon mustard and salt and pepper. Add red grape halves and diced celery. Serve on sourdough slices.
