Family Friendly Instant Pot Recipes With Jessica Levinson, RDN

If there was ever a time to have quick, easy meals, it’s now. Between WFH, home schooling and social distancing, it seems like it’s hard to get out of the kitchen. Having an Instant Pot can be game changing for making dinner every night. Jessica Levinson, my friend, fellow RDN and culinary nutrition expert and I have teamed up to give you some of our favorite IP recipes to get you through this time. (You can see more about Jessica here www.jessicalevinson.com.) Keep in mind that just because you can find a recipe for something in an IP, doesn’t mean it will taste good. Unlike other cooking methods, the Instant Pot is great for some foods, but leaves others tasting soggy, mushy and overcooked (think things like fish, steak and burgers). Below are some of our favorites:

These IP burrito bowls from @damn_delicious are an easy, family friendly meal using pantry staples like corn, beans and rice. Swap out Mexican cheese for whatever kind you have at home.

This yummy recipe from @karalydonrd is my kind of recipe. Dump everything in the IP and you are done!

Ground beef is great in an IP. This comforting meal from @dinneratthezoo uses a lot of pantry staples and ingredients you probably have at home. Quick substitutions: leave out cocoa powder if you don’t have, use water if you don’t have beef broth and use whatever beans you have at home and ENJOY!

These ramen bowls, from @hipfoodiemom1, are by far one of my favorite IP recipes. These bowls utilize a variety of pantry staples and have lots of additional items you can add based on what you have at home. You’ll feel like you are eating out without having to do a lot of work or leave your house!

This hearty vegetarian dish from @katiesmorford is a great way to fill your family without spending a lot of money. And, it’s a great alternative to rice and quinoa. (we’re leaving out the pecans because of nut allergies, but those are certainly a great source of nutrition if you can eat them)

This recipe from @wellplated is a must if you are trying to make tasty recipes from dried beans. It’s also a great meal to batch cook because it will freeze well for another meal. Serve with some warm bread for a hearty meal for the whole family.

This side dish from @jlevinsonRD is a great way to make an intimidating vegetable easy. And, this is a delicious way to mix up your vegetables, and give your kids a fun activity of pulling off and eating the leaves.
